This recipe is just too good not to share!
1 ripe avocado
2 Tbsp raw cacao powder
Pinch of salt
Pinch of cayenne pepper (optional)
½ tsp vanilla extract
3 Tbsp water
1 Tbsp maple syrup
Use a high-power blender, food processor, or large bowl & immersion blender.
Add scooped avocado and all ingredients and blend until creamy.
Lightly toast shredded coconut on the stovetop until just barely brown.
Set aside until cool. Add lime zest and stir well. Gently sprinkle on top of pudding mixture prior to serving.
